I have blogged in a while and I have made several desserts since then.
Mother’s day was a week and a half ago. I absolutely adore my mother, she is the best and I couldnt ask for a better one. So I wanted to create a special treat for her. I made a basic vanilla cake(that’s the only kind of cake I have made so far and I’m thinking I need to branch out soon. haha) I made a cream cheese frosting, her favourite, and decorated it the best of my abilities. I made the frosting covering the cake a light yellow because that is her favourite colour and she has a bright personality to match that colour. I left the designs white and I loved how it turned out.
I don’t know how to do flowers yet but I am planning on taking a Wilton decorating course this summer. So those will hopefully be soon to come! I’ll be able to do a bit more variety of decorating.
This past Sunday was my sister’s 21st birthday. I love my sister and she is spending her first summer at home since she went to college 3 years ago. I wanted to make her something that reflected her and would be pretty and yummy. FAIL. I found a fondant recipe that is not like most and I substited the shortening and used butter. It was so greasy and fell apart and was a complete disaster. I cried after working on various desserts for her for 8 hours straight when the cake was finished and look terrible. I had planned out my designs the week before and I loved it, too bad I couldnt replicate it. It was going to be beautiful, colourful, and full of decorations all made of fondant. It was an alternating round, yellow cake, square, chocolate cake. The cake part was delicious. The fondant even tasted great, it just looks like a complete mess. I will be trying a knew fondant recipe this weekend and praying it will work. I love what you can do with fondant and I hope I can decorate my cakes with it. So we’ll see how that goes.
Finally, I made double doozies, they were amazing and great looking(unlike the cake), that’s all I gotta say.
I found the recipe online for the icing and just make regular cookies. They are extremely sweet but yummy.
Double Doozie Icing:
Icing: for double doozies
1 pound confectioners’ sugar
1 tablespoon butter
1/2 cup shortening
2 tablespoons milk
2 tablespoons hot water
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
